Happy Meal

A very happy midsummer to all! Summertime fun is all about the outdoors, basking in the sun, getting the most of vitamin D and keeping yourself hydrated. Ditch highly processed foods and eat mostly raw whole, plant based foods that contain water or the juiciest like watermelons, melons, cucumbers, beets, berries, peaches, plums, nectarines and many more!

Here's a fantastic and refreshing meal that you can whip up in minutes. But before I tell you the ingredients for this lusciously decadent salad, I always recommend: to say no to GMO, buy organic as much as you can, or buy local produce that traveled a short distance to your plate, support your local farmer's market and food coops; soak your nuts & grains overnight; and chew your food! Lastly, give back to the earth by composting food scraps, it feels so rewarding and great for the environment.

2 cloves garlic
2 handfuls of walnuts (soaked overnight)
1 small cucumber, quartered
10 leaves romaine lettuce (leave 5 for garnish)
2 handfuls of basil
2 handfuls of parsley
2 cups grape tomatoes
1 cup sundried tomatoes
1 cup extra virgin cold pressed olive oil
squeeze of lemon
dried oregano
himalayan salt
black pepper
1 apple, quartered & cored (pick your fave)

Garnish:
bunch of alfalfa sprouts
3 tbsp nutritional yeast

In a food processor or blender, add garlic and walnuts together to coarsely chopped but not fine. Add the sundried tomatoes, pulse about 5 times. Then add all the remaining ingredients, blend until all is chopped. Lay the romaine leaves on a plate with some sprouts, put a couple of spoonfuls of the salad mixture on each leaf and generously drizzle nutritional yeast, salt and pepper. You may refrigerate the mixture first to let it cool, or just eat and indulge! Yes, it's absolutely delicious and nutritious!

Tip: Carry around with you a reusable glass or tin water bottle to keep yourself hydrated. Another tip, drink 30 minutes before you eat your meal.
